Why Au Cheval is hard to book
Au Cheval is a diner in name only. Tucked off Cortlandt Alley, the Tribeca room hands most of its seats to walk-ins, which means the reservation pool is tiny and gone in minutes. Each new date opens 14 days ahead at 9am Eastern, and the handful of bookable tables disappear before most people have finished their coffee. Show up without one and the evening wait can run past three hours. Demand far outstrips a room this size, and the seared-patty cheeseburger keeps the line out the door every night.
We treat the 9am Eastern drop as a standing assignment. The moment your date opens 14 days out, we are on it, and we keep watching the cancellations right up to service so a released table becomes yours. The reservation is secured in your name, at Au Cheval, on the night you actually want. Same venue, same date, every time. We never move you to another evening and never send you somewhere else.

An operator reviews the request, checks the room, and sends a confirmation that we are working it. Usually within thirty minutes.

We reach the floor manager directly, by phone or by text, depending on the night. We do not refresh Resy. We make a call.

We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Au Cheval, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
