Why Bird Dog is hard to book
Bird Dog seats only a handful of guests at a time, closer to a dinner party than a restaurant, on a tight prix-fixe and tasting format that turns every chair into a coveted one. The booking window is narrow and exact: tables release just 14 days in advance at 9am Eastern, and a room this small is claimed within moments of opening. Miss the morning and the night is gone.
We sit on the drop for you. The instant the 14-day window opens at 9am Eastern we move on the date you want, and we keep watch on cancellations as the night approaches, securing the table in your name. Always the same room, always the night you asked for. We never offer you a different restaurant or a different date as a consolation.

An operator reviews the request, checks the room, and sends a confirmation that we are working it. Usually within thirty minutes.
We work the room.
We reach the floor manager directly, by phone or by text, depending on the night. We do not refresh Resy. We make a call.
You are confirmed.
We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Bird Dog, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
