Dan Barber runs the dining room out of the Stone Barns Center for Food and Agriculture in Pocantico Hills, with the produce coming from the farm visible from the table. The menu has no choices and no a la carte — it is whatever the farm picked that morning, served to about sixty people a night.
Tock releases reservations in monthly drops, and the drop hour is the only window. The car ride from Manhattan is forty-five minutes; the wait list from the moment a slot opens is days. The taproom and grill on the farm grounds take walk-ins for a simpler menu when the dining room is full.

Walk into Blue Hill at Stone Barns, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
