Why Buvette is hard to book
Buvette is small in the way that defines its charm and defeats most diners. A handful of marble-top tables sit inches apart, the counter holds a few stools, and the kitchen turns out its menu of small plates from a galley you could miss if you blinked. For years it took no reservations at all, and the line down Grove Street was the only way in. Today a thin block of tables opens fourteen days ahead, and that tiny release is gone almost the moment it lands. With demand from the whole West Village pressing on a dozen seats, the math never favors the casual booker.
We treat the fourteen-day release as a moment to be won, not waited on. We are watching the instant the window opens at nine in the morning, and we keep watching the cancellation feed in the days that follow, when a single table coming loose is the difference between dinner and the sidewalk. We secure the table in your name, at Buvette, on the date you asked for. Same room, same night, never a stand-in and never a different evening offered in its place.

An operator reviews the request, checks the room, and sends a confirmation that we are working it. Usually within thirty minutes.

We reach the floor manager directly, by phone or by text, depending on the night. We do not refresh Resy. We make a call.

We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Buvette, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
