Why Cafe Chelsea is hard to book
Reservations open exactly two weeks in advance at midnight, and the room moves the moment they do. The 8 and 8:30 seats are gone almost instantly, and the rest of the night fills within a few days. The notify list has run past a thousand names on a single Saturday. A 200-seat bistro inside the Hotel Chelsea sounds like a lot of room, but when the entire fashion and downtown set wants the same Friday, capacity stops mattering. The drop is a sprint, and most people are not awake at midnight to run it.

You eat.
Walk into Cafe Chelsea, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
