Why Casa Mono is hard to book
The room is the whole problem. Casa Mono holds roughly thirteen tables, and it has carried a Michelin star every year since 2009. That is twenty years of demand pressing against a handful of seats. Prime evenings vanish the moment they post, and what little opens after that surfaces only as scattered cancellations across the week. The bar runs first-come, but a table on the night you actually want it is a different proposition.
We watch the release the instant it drops, thirty days out at 10am, and we keep watching the cancellation churn right up to the night itself. When a table opens for the date you asked for, we secure it in your name. Same restaurant, same date, never a swap to a different night or a different room. You arrive, you sit, you order the razor clams.

Walk into Casa Mono, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
