Ito is Masaki Ito's West Village omakase counter, with eight seats facing the cutting board and one seating a night. The menu runs about twenty pieces of Edomae sushi over two hours.
Resy releases seats ahead in a rolling window. Eight seats is a small enough room that the prime nights clear in the first minute; weeknights stay open longer. There is no second counter and no bar option.

We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into ITO New York, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
