Why Kanoyama is hard to book
The dining room runs a la carte, but the prize is the omakase counter, and the counter is tiny. Seatings run only Wednesday through Saturday, twice a night, each one stretching close to three hours, so a single chef turns just a handful of guests per evening. Add a fish program flown in fresh daily and a loyal following that has kept this room a destination for over a decade, and Friday and Saturday counter seats are gone almost the moment they open. Walk-ins do not get the counter, and the small number of weekend slots means a quiet Tuesday is often the only honest answer the floor can give you.
We watch the release the instant the calendar turns thirty days out, and we keep watching the cancellations right up to service, because a counter this small means one dropped seat is the whole game. When a place opens at the counter on the night you actually want, we secure it in your name. Same room, same date, every time. We do not move you to the dining room, we do not push you to another evening, and we never offer a substitute restaurant.

We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Kanoyama, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
