Daniel Rose and Stephen Starr opened Le Coucou inside the 11 Howard hotel in 2016 and pulled a Michelin star in their first full year. The dining room is forty-something seats with chandeliers and a frescoed ceiling.
Resy opens two weeks ahead. The 7-to-9pm tables go in the first minutes; the late-night seatings (10pm-plus) stay open longer. The hotel bar across the lobby takes a shorter menu and walk-ins.

An operator reviews the request, checks the room, and sends a confirmation that we are working it. Usually within thirty minutes.
We work the room.
We reach the floor manager directly, by phone or by text, depending on the night. We do not refresh Resy. We make a call.
You are confirmed.
We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Le Coucou, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
