Niki Nakayama runs n/naka out of a converted house in Palms, serving a thirteen-course modern kaiseki menu that earned two Michelin stars and a Chef's Table episode that doubled the demand. The room is twenty-six seats, two seatings a night, four nights a week.
Tock releases seats exactly three months ahead at noon Pacific. They are gone before lunch is over. The list of people who got the email before noon is a list it is hard to get on. The other list is a list of people who know how to talk to the front of house.
