Why Noreetuh is hard to book
Noreetuh is an intimate room, and that is the whole point. The kitchen, led by Chung Chow and his Per Se alumni partners, turns out modern Hawaiian cooking against a wine list deep enough to draw sommeliers and collectors from across the city. Tables release only two weeks ahead, and the best nights and the best times vanish the moment the window opens. With so few seats and such a loyal following, prime weekend reservations are gone in minutes, leaving most callers to settle for an early seating or no seating at all.
We work the window for you. The booking drops fourteen days out at midnight Eastern, and we are there the instant it opens, then we keep watching the cancellations right up to your night. You tell us the date you want and we secure that table in your name at Noreetuh, same room, same date, never a substitute. You simply arrive.

An operator reviews the request, checks the room, and sends a confirmation that we are working it. Usually within thirty minutes.
We work the room.
We reach the floor manager directly, by phone or by text, depending on the night. We do not refresh Resy. We make a call.
You are confirmed.
We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Noreetuh, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
