Why Sixty Three Clinton is hard to book
The room seats only about fifty across the dining room and the bar, and every seat is a single seven-course tasting that turns just once or twice a night. There are no walk-ins and no easy second seating to absorb demand. Tables release twenty-one days in advance at midnight Eastern, and the prime Friday and Saturday slots are gone within seconds of the clock striking. What is left over moves through cancellations that surface and disappear at random hours.
We work the only two doors that exist. At midnight twenty-one days out we are on the release the instant it opens, going for the night you actually want. And we keep watching the room around the clock for the cancellation that frees the seat someone else gave back. When a table is yours, it is held in your name. Same room, same date you asked for, never a swap to another night or another restaurant.
