Why Sushi Amane is hard to book
The counter holds eight guests. There are two seatings a night, Tuesday through Saturday, and the omakase is built fresh each day from what arrived that morning, so nothing is held in reserve and nothing repeats. Reservations release on a rolling daily window roughly a month out and they go in the first minutes after the clock turns. With so few seats and a menu that changes nightly, the room sells through before most people have refreshed the page.
We watch the release the moment it opens and we keep watching for the cancellations that surface as the date approaches. When a seat for your night comes free, we secure it in your name at the venue you asked for, on the exact date you asked for. Same counter, same evening, never a substitute. You arrive, sit down, and let the chef lead.

Walk into Sushi Amane, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
