Carbone landed in South Beach in 2021 and has been the hardest reservation in the city ever since. The book opens thirty days out at ten in the morning, and the prime tables are gone before the minute turns. What clears for the public is the five o'clock and the ten o'clock, never the eight, and the rest of the room runs on a waitlist where a cancellation gives you about thirty seconds to claim it. Major Food Group built a room that fills itself, and the host stand has no reason to bend.
We are inside the rhythm of this room. We know the morning the book opens and we are on it the second it does, and we watch the cancellation window the public never gets to see. The host stand answers based on recognition, and our name is one it knows. When we ask for the eight o'clock, we are not a stranger calling cold.
