Carbone at ARIA is the same Major Food Group room as New York, dropped onto a Strip that already runs on access. Tables open thirty days out and the prime hours are gone almost as fast as they post, claimed by Resy's morning rush and by the resort's own VIP channels before the public ever sees them. The midweek seat looks bookable. The Friday eight o'clock never is.
We do not refresh an app and hope. We hold standing relationships with the room and the people who run its floor, and we watch the cancellation flow that surfaces seats the public window never shows. When a prime hour comes loose, your name is already where it needs to be.

We reach the floor manager directly, by phone or by text, depending on the night. We do not refresh Resy. We make a call.
You are confirmed.
We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Carbone Las Vegas, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
