Joel Robuchon is not a Strip restaurant in any ordinary sense. It is a hushed art deco townhouse tucked inside the MGM Grand Mansion, a single small dining room of purple velvet and crystal that turns over only a handful of tables a night. The signature is a sixteen course degustation that runs close to four hours, so each seat is held for the entire evening and the room cannot stretch. Jackets are required, the pace is deliberate, and the few prime seatings on a given night go long before most people think to ask.
We do not chase the public booking window. We hold relationships with the people who run the room, we watch the cancellations that surface when a four hour table releases late, and we know the quiet seatings that never reach the open calendar. When we put your name forward, it lands at a host stand that already knows ours.
