Cotogna is the casual sibling to Quince, Michael and Lindsay Tusk's fine dining room next door, and it draws the same demand into a far smaller space on the corner of Montgomery and Pacific. The menu changes by the day around the wood burning oven, the spit roasts, and whatever came in from the farms that morning, which is exactly why regulars keep coming back. The restaurant runs its own book rather than handing it to a platform, so the seats that matter open quietly and go to whoever is watching. Persistence is the price of entry, and most people do not have the time for it.
It is not a reservation system. It is a guest list. We hold real relationships with the room, we watch the cancellations as they surface through the day, and we know the windows the public never thinks to check. When we ask for a table, the name on the request is one the host stand already recognizes.

An operator reviews the request, checks the room, and sends a confirmation that we are working it. Usually within thirty minutes.
We work the room.
We reach the floor manager directly, by phone or by text, depending on the night. We do not refresh Resy. We make a call.
You are confirmed.
We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Cotogna, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
