House of Prime Rib has served one thing since 1949, prime rib dry-aged twenty-one days and carved tableside from silver carts, and the city has never stopped wanting it. The dining room moves through roughly three hundred and sixty ribs a week, and prime weekend seats are spoken for months out the moment the book opens. The room has had two owners in seventy-five years, the Betz family among them, and it runs on the same patient rhythm it always has. What is left for the public is the bar waitlist and a long wait standing up.
It is not a reservation system. It is a guest list. We hold real relationships with rooms like this one, we watch the cancellations the public never sees, and we know which windows open and when. When a prime table comes loose, your name is already where the host stand will recognize it.

You eat.
Walk into House of Prime Rib, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
