Quince holds three Michelin stars in a single historic brick room in Jackson Square, where Michael Tusk has cooked since the restaurant moved here in 2009. The book opens on the first of each month for the month ahead, and the tasting seats are gone almost as fast as they post. The dining room is small, the menu is a prepaid commitment, and a missed table carries a fee, so the house guards every seat. Demand for a three star room this size always outruns the calendar.
It is not a reservation system. It is a guest list. We hold standing relationships with rooms like this one, and we know exactly when the monthly release lands and how fast it moves. We watch the cancellations the public never sees and we put your name where the house already recognizes it.
