Bestia has been the Arts District's anchor since Ori Menashe and Genevieve Gergis opened it in 2012, and the demand for the wood-fired pizzas, house-made pasta, and slow-roasted lamb neck has never let up. The book opens sixty days out, and prime weekend seats between six and nine vanish within weeks of release. The host team places confirmation calls two days before service, which is when the few seats that come loose quietly reopen.
We watch that two-day confirmation window, where the no-shows and cancellations surface long after the public has stopped looking. We hold seats the moment the sixty-day book turns, and we know which times move when we ask. It is not a reservation system. It is a guest list, and we are on it.

We charge the card and send your confirmation — the time and the name to give the host.
You eat.
Walk into Bestia, give your name at the host stand, sit down. The room takes it from there. We do not see you again until the next request.
